Fondue

Es ist Fonduezeit. Mein Fondue gibt’s natürlich vom Grill!

Zu Beginn schneide ich einen Knoblauch in zwei Hälften.

Dann reibe ich die Gusspfanne zuerst mit der einen und dann mit der anderen Knoblauch-Hälfte ein. Auch die Wände. So bleibt der Käse später nicht kleben.

Dann giesse ich den Weisswein in die Pfanne und gebe einige Knoblauchzehen dazu.

Nun erwärme ich die Gusspfanne auf dem Grillrost.

In der Zwischenzeit löse ich die Maisstärke in einem Glas Kirsch auf.

Sobald der Weisswein warm ist, gebe ich die Käsemischung in die Pfanne.

Nun rühre ich den Käse, bis er geschmolzen ist.

Achtung: Die glühenden Kohlen dürfen sich nicht direkt unter der Pfanne befinden, weil die Pfanne sonst zu heiss wird.

Sobald der Käse flüssig ist, gebe ich einen Teil der Maisstärke hinzu. Falls nötig, kann ich später jederzeit zusätzliche Maisstärke dazugeben.

Zu guter Letzt würze ich das Fondue mit Pfeffer und Paprika und mische alles nochmals gut durch.

Fertig ist das Fondue – Stüssi Style.

Fondue

Its cold outside and that time of the year again - fondue time. My fondue is, of course, made on the barbecue!

First, cut a few cloves of garlic into two pieces.

Rub the cast iron skillet with the garlic starting at the bottom and then all around the sides. This ensures the cheese won't stick to the sides later.

Pour white wine into the pan and throw in several pieces of garlic.

Then heat up the skillet on the barbecue.

Meanwhile, dissolve the cornstarch in a glass of kirsch schnaps.

As soon as the white wine is warm, add the cheese mix into the pan.  Stir the cheese in a figure of 8 until it has melted.

Be careful not to place the pan above the glowing embers as the pan will then get too hot and burn the fondue - so make sure the coal is divided properly underneath.

As soon as the cheese is of a runny consistency, add a bit of the cornstarch. If needed, add more cornstarch later.

Finally, season the fondue with pepper and paprika or for those who like it, raclette or fondue-mix and mix everything up once again.

And there we have it - fondue - Stüssi style!
